About Our Farm
The olive varieties, spread over an area of over 2 hectares, are Itrana, Moraiolo, Frantoio, Leccino, Picholine. The company is Tre Foglie Gambero Rosso for the years 2018-2019 and 2021 and a Slow Food Presidium for the Itrana variety. For 2019 it was a finalist in the new category “Absolute Beginners” of the Sol d'Oro Emisfero Nord 2019 competition at VeronaFiere. The harvest is done manually with the help of facilitators. The oil is milled within 24 hours of harvesting using the cold pressing method. The 100 percent Italian Antiche Terre Pacella quality extra virgin olive oil is recommended for its nutritional characteristics and is available in bottles and cans. The company offers a line of organic ecological cosmetics. Antiche Terre Pacella is Two Leaves Gambero Rosso for 2023. It is reported and reviewed by the Slow Food Extra Virgin Olive Oil Guide 2023 and by the Food and Wine Guides of the newspaper La Repubblica.

Our Products
Our Extra Virgin Olive Oil, produced with 100% of our Italian olives. It has a high nutritional profile thanks to its organoleptic properties, the geomorphological characteristics of the stony soil and a totally natural production. It is an oil with an intense green color with golden reflections. It has a herbaceous aroma and fruity hints of tomato, with a very light spicy aftertaste, which gives it a delicate and elegant structure.
It is recommended for its organoleptic characteristics and for its low acidity content below 0.3% which makes it a highly digestible oil. Its qualities allow it to season and enhance the flavor of all the typical dishes of our region. Ideal raw on our local products such as artichokes or grilled vegetables. Also excellent on fish and grilled meats. In short, a product that due to its lightness is suitable for all dishes.
