The Territory: Our Olive Grove and Ciociaria

It is one of the most homogeneous lands of the Lazio region. Here, in addition to the typical

cultivars of central Italy: Leccino, Frantoio and Moraiolo, we find the native Rosciola

and, limited to the municipality of Valcomino, the local variety Marina .

The soil and climatic conditions, guaranteed by the protection from the north winds, thanks to the presence of the Ernici, Prenestini and Lepini mountains, give

oils with excellent tasting characteristics. In particular on the Lepini Mountains the olive tree has found

a very suitable area. The extra virgin olive oil obtained is famous for its delicate taste and moderate acidity.

The Perfume

The scent is worthy of the best oils. The product is still obtained today in artisanal mills for

cold pressing, to ensure the organoleptic and nutritional value remains intact.

It is of medium density, more or less cloudy, yellow-green in colour, with an intense aroma of ripe olives.

Extra Virgin Olive Oil Ancient Lands Pacella

Antiche Terre Pacella oil is produced with 80 percent Itrana, 20 percent Frantoio and a balance of Moraiolo, Leccino and Frantoio and Picholine. It has a medium fruitiness with fresh balsamic notes and tomato leaf. In the mouth you can feel the green tomato, the bitter almond accompanied by hints of medicinal herbs and eucalyptus that continue in a balanced and persistent finish.

 

PAIRING with vegetable carpaccio, panzanella, assorted focaccias and spiced pork.
